It's absolutely pissing it down. Biblical rain. No wonder northern Italy's flooded.
It's dry at the moment in Tycoch Peggy, tomorrow is going to be a wash out though!

The Italian gastronomic tour continues. We're in Lucca, this is the foccaccia to go with our salad and spaghetti carbonara.
Took train from Bologna to Florence today on the way to Lucca. The high speed line goes under the Appenines, the journey is 93% in tunnels and the train does 300km/hour (190mph). Almost had to change my kecks.

That line is a magnificent feat of engineering. It will also have cost you a fraction of what a similar UK train journey would cost.

And you'll probably be standing in the isle for best part of the Journey, rip off Britain in it.
 
If I don’t have much time then I use the one in the photo, and are usually inclined to add a shot of brandy and some whole peppercorns to it. Quick, easy and very good in less than five minutes. Note, there’s a mild version but avoid this as it’s… mild.

On the other hand, if I’ve got the time then this is the go to recipe.
My go to pepper sauce is to deglaze the pan with beef stock, dollop of mustard, cream, salt and whole peppercorns. Yum!
